Dark Chocolate Brownie Berry Parfaits

Many people don’t know that I do more than sew and take selfies. Promise me you won’t tell!! ;-) Cooking is something I love to do too. I love to eat and while I love to eat out, I would rather spend my money on fabric… and plus “I ain’t got time!” <---Seriously! So most of the things I want to eat I make at home.

I thought for Valentine's Day it would be nice to share a dessert recipe with you that is simple, delicious, AND good for you. I would say healthy but I don't want you to get scared. Lol! The heart healthy powerhouses in this recipe are dark chocolate, berries, and Greek yogurt.
 Brownie Berry Parfaits via Chewsy Lovers
Dark Chocolate Brownie Berry Parfaits
Makes 4

Ingredients:
1/4 c. Unsalted Butter, melted
1/4. c . Unsweetened Cocoa Powder
1/2 c. Granulated Sugar
1 Large Egg
Vanilla Extract, dash
Pinch of Salt
1/4 c. All purpose Flour
1 c. Dark Chocolate Chips
1 c. Vanilla Greek Yogurt
1 tbsp. Honey
1 c. Fresh Strawberries, sliced

1. Preheat oven to 350. Mix butter, cocoa powder, and sugar in a bowl until thoroughly combined. Add in egg, vanilla, and salt. Mix well.

2. Fold in flour and Chocolate chips gently until just covered. Pour into lightly oiled baking ramekins or small baking pan.

3. Bake for about 15-17 minutes. Let them cool completely.

4. In a separate bowl. Mash 1/2 of the strawberries into the yogurt. Add in honey and stir to combine. Set aside.

5. Cut cooled brownies into small cubes. Set aside.

6. To assemble the parfaits. Layer the brownie bites, yogurt, and fresh berries in each glass. Repeating the pattern to your preference. Enjoy!!

  1. Using Greek yogurt for the brownie parfait is a wonderful idea. I bet it gives a nice tangy flavor that balances the sweetness of the brownie.
