Pineapple Parfaits with Coconut Granola

Yogurt may not be new in your house, but we challenge you to increase your health benefits even more by “going Greek.” Greek yogurt is a delicious way to enjoy less sugar than regular yogurt, almost double the protein, and still a great source of calcium.Greek yogurt is a great choice for little tummies, even for those who may be lactose intolerant because the live bacterial cultures in it make it easier to digest than milk and regular yogurt. It is also a strained yogurt so much of the whey, sugar, and lactose is strained out making it creamier, tastier, and healthier than regular yogurt. It can be used to marinate chicken, replace sour cream in your favorite baking recipes, or even mayonnaise in your most beloved dishes to make them lighter and better for you. Try these DELICIOUS pineapple parfaits made with Greek yogurt for a quick, and healthy breakfast or snack!

Pineapple Parfaits with Coconut Granola
(Serves 4)

(4) 6oz. Cups
1/2 c. Shredded Unsweetened Coconut
1 c. Oats and Honey Granola
2c. Plain Non-fat Greek Yogurt
1c. Cream of Coconut
2c. Diced Pineapple or 15oz can of Pineapple Chunks, drained

Preheat the oven to 350 degrees. Spread the granola and the coconut together on a sheet pan and toast for 10 minutes, until fragrant. Do not leave unattended. It WILL burn! Remove from the oven and set aside. In a medium sized bowl mix yogurt and cream of coconut until mixed well. Spoon a little diced pineapple into each cup. Then layer some granola on top. Add yogurt. Repeat pattern and top with remaining granola. Enjoy!

  1. I love granola’s but not yogurt I don’t know why I am not a fan. Loving this though a great snack for someone on the go

    • Lol! You might like it better on Greek yogurt. To me it has a different taste than regular yogurt. I don’t really care for regular yogurt.

    • They will love it! I didn’t tell mine it was healthy. It would break their hearts. Lol!
